Going Nuts for Vegan Cheese - with Margaret Coons

Going Nuts for Vegan Cheese - with Margaret Coons

In this Season 2 episode of the Jennifer Zee Plant-based & Happy Podcast, I had the lovely opportunity to chat with Margaret Coons - Founder and CEO, or “The Big Cheese” .

Food preparation and production has been a long-time passion for Margaret. A vegetarian since the age of 12 and vegan since the age of 19, creating delicious alternatives to more conventionally available food products was a hobby that turned into a career. She didn’t grow up in a vegetarian family, so, she began to cook for herself at a pretty young age and became interested in making vegetarian and vegan dishes. Working as a chef in a vegan restaurant, Margaret spent many late nights in the kitchen creating cashew-based vegan cheeses. In 2015 she decided to try her hand at a local farmers’ market booth with the vegan cheeses she had been making for a couple of years. This was when the young chef-turned-entrepreneur combined her passion for food and the art of culinary experiences with her commitment to her dietary choices to create Nuts for Cheese. Just as she started the booth at the farmers’ market, when demand began to soar and retail requests came in, the business took off from there. Nuts For Cheese is now available in 1000 stores across Canada!

In this episode Margaret and I chat about:
➤ Choosing to be vegan (and sticking to it) even when family and friends are not.
➤ Why vegetables may taste better now than when you were a kid.
➤ Turning your hobby into a career.
➤ Growth in the plant-based sector.
➤ How today's vegan cheeses are leaving customers with zero reasons to eat traditional cheese.
➤ Challenges and how to overcome them as a plant-based entrepreneur.
➤ Keys to being a success a an entrepreneur.
➤ Why you should spend more time on doing the things that you love.

She has been able to reverse her own PMS symptoms and encourage emotional healing from trauma as a result of this transition. Demystifying Muscle Activation Techniques with Jenny Kong

Demystifying Muscle Activation Techniques with Jenny Kong

In this Season 2 episode of the Jennifer Zee Plant-based & Happy Podcast, I had the amazing opportunity to chat with Jenny Kong, my very own Muscle Activation Specialist! If you haven’t heard of MAT yet, you could be missing out on the key element needed to rebalance your body, increase muscle function and range of motion, experience faster recovery time, better workouts and finally, to achieve your highest quality of life yet.

Jen is the owner of Parallel Fitness Studio, a Personal Training Studio, voted best fitness centre by the community of Richmond Hill.

She is a Kinesiologist alumni from University of Toronto and a Personal Trainer and Muscle Activation Techniques Specialist.

Jen has worked with people of all ages, from athletes, to clients with MS, Parkinsons disease, lyme disease, stroke, surgery recovery, injury, joint replacement and arthritis among others.

She has an exceptional understanding of not just physical activity, but biomechanics and human anatomy and uses all of that to create workouts that build you up instead of break you down.

As a twin mom, she understood first hand postpartum how body aches and pain can affect everyday performance and has been since an advocate of a “less is more” philosophy. She focuses on finding weak, underused muscles that aren’t firing optimally and strengthening those to create a more balanced muscular system. Every workout is dictated by the client’s body and structural needs and not based on protocols or the latest trends.

She is totally passionate about health and wellness; and has spent over a decade in this industry educating clients about their bodies and how to work smarter, not just harder.

Jen’s proudest accomplishments are her twin girls and the time she went back stage and did a MAT treatment session on Phil Collen, Def Leppard’s Lead guitarist and his wife during their concert in Toronto.

In this episode Jen and I chat about:
➤ What is Muscle Activation Techniques?
➤ Comparing MAT to other therapies.
➤ Finding the root cause of pain.
➤ Locating weakness in the body. Psst... It’s not always where you think it is.
➤ How the body begins to overcompensate for muscle weakness.
➤ The true purpose of exercise.
➤ How an injury manifests.
➤ Workouts that focus on building you up rather than tearing you down.
➤ Comparing social media ‘mom life’ to the real thing.
➤ Dieting regrets.

The Relatable Vegan with Mario Fabbri the Creator of "Trying Vegan with Mario"

The Relatable Vegan with Mario Fabbri the Creator of "Trying Vegan with Mario"

On this episode of the Jennifer Zee Plant-based & Happy Podcast I had the incredible opportunity to chat with the creator of “Trying Vegan with Mario"

Mario Fabbri hosts a cooking show called “Trying Vegan with Mario” where he is on a mission to learn the best plant-based recipes from vegan experts. Trying Vegan with Mario airs on channel 1 in NYC and is streaming on Roku.

Growing up Mario’s dad owned an Italian Sausage factory and for a long time he anticipated taking it over. The sausage factory was a big part of his family tradition. At 18 years old he moved from his home in Chicago to Colorado, and at 20 years old, started a video production company filming food commercials for television. Everything was about creating the most ‘droolworthy’ meaty, fried, cheesy food shots to entice people. Mario became interested in vegan food when his business partner lost 100 pounds by eating plant-based. After that he began learning as much as he could about plant-based nutrition. During this time, he had to stop making unhealthy commercials and learn how to spread a healthier message. That’s what inspired Trying Vegan with Mario. The viewers learn about vegan cooking and benefits through his experience. It’s about delicious food that everyone can make.

In this episode Mario and I chat about:
➤ How not being able to relate to other vegan content led him to create “Trying Vegan with Mario”
➤ The basics for going plant-based
➤ Easy and delicious plant-based food for everyone
➤ How plant-based nutrition is helping people operate at a higher level
➤ Building a plant-powered business
➤ Letting go of old habits and making room for new ideas
➤ A new approach to Veganism
➤ Constructive ways to give people the tools they need to become plant-based
➤ Following your true passion in life

Why it Takes More Than a Healthy Diet to Achieve Optimal Health - with Olivia Kelly

Why it Takes More Than a Healthy Diet to Achieve Optimal Health - with Olivia Kelly

In this episode of the Jennifer Zee Plant-based and Happy Podcast, I had the amazing opportunity to chat with Olivia Kelly.

Olivia Kelly, MPH, began her lifelong expedition in healthcare by starting a fitness training business in her undergrad days at UCLA, where she earned her bachelor's degree in psychology. After gigs teaching surfing on Maui and writing for the Rough Guides, her father informed her that she would have to go indoors to earn a living.  A stint working in the first dot com boom for an early internet service provider got her thinking about how to harness social networks and mass communication to inspire healthier lifestyles.

Her writing and communications background led her to a communications director and speechwriter role with a Los Angeles city councilmember, whom she helped position for a subsequent role as U.S. Congresswoman.

It was her experience in the council deputy job that inspired Olivia to study health policy. After graduating from UCLA’s Fielding School of Public Health in 2013, in the department of Health Policy and Management, Olivia worked at UCLA’s Center for Healthier Children, Families and Communities, spearheading an impact investing project focused on improving population health throughout the lifecourse.

An idea Olivia first developed in one of her MPH courses just wouldn't go away, and, a few iterations later, is what has now become WellStart Health.

Olivia is perpetually excited about sharing the innumerable benefits of a healthy lifestyle with others.  Her favorite vegetable is eggplant – yes, a nightshade -- and she loves spending time with her family, running, surfing, skiing, camping, traveling, and cleaning up cereal spills, along with an affinity for Latin American culture.

In this episode Olivia and I chat about:

➤ Why a healthy diet alone will not help you to achieve optimal health
➤ Social media’s positive and negative impact on plant-based Living
➤ Celebrity influence on the plant-based movement
➤ Preventing, reversing and dialling back disease
➤ How our culture of convenience is killing us
➤ What is lifestyle medicine?
➤ Why support is so important to healthy living success
➤ The physical, emotional and financial effects of sick employees
➤ How to avoid getting caught up in the nitty gritty details of plant-based nutrition

Finding Freedom through Natural Products that Actually Work - with Ira Green

Finding Freedom through Natural Products that Actually Work - with Ira Green

After being diagnosed with an inflammatory condition, and learning about all of the foods that contribute to inflammatory flare-ups, I still wasn’t entirely educated on the effects of harmful chemicals and how they may be contributing to my condition.  After chatting with a past guest about chemical-free living, I started to really think about what I was putting on my skin and inevitably into my body on a daily basis.  I decided to slowly start making the transition to natural products and figured that my daily clinical deodorant should be the first to go! And so, my quest began…

I was getting pretty discouraged with trying to find a deodorant comparable to my clinical version that is, until I found Freedom.  You can head over to the Jennifer Zee website to read all about my findings but for now I’m super excited because I have the CEO and founder of Freedom Ira Green.

Ira Green is the CEO and founder of Freedom Deodorant. Citing “Mother and Dishwasher” as her occupation right beside “CEO and founder,” she is fiercely loyal and devoted to her daughters and friends.

“A couple of years ago, three of my friends were diagnosed with breast cancer,” recalls Ira. “Their doctor recommended that they use natural cosmetic and hygienic products, including staying away from normal antiperspirant. According to the FDA, antiperspirant is a 'drug'—did you know that? I didn’t, and I decided to never touch it again! Well, that wasn’t so easy. The alternatives didn’t work. They smelled like trees, or had to be scooped out of a pot, or had perfumes in them, or claimed to be 'all-natural' when they weren’t. So I was left with the question of what to do. My answer was to make my own all-natural deodorant in my kitchen, just for me, my daughters and my friends.”

Fast forward two years and Freedom Deodorant is sold at the Four Seasons, Miraval, Mandarin Oriental, Ritz Carlton, Anthropoligie and many others. This was done with lots of hard work. Ira never paid influencers or took money from big investors, though that would have made it easier. Freedom is a small company that supports The Caring Place, the Nevada Childhood Cancer Foundation and the American Cancer Society. Ira has a passion for helping anyone who has been affected by cancer to lead an easier life, and we just had the opportunity to sponsor a couple of kids battling cancer to go to summer camp!”

In this episode Ira and I chat about:
➤ Making natural feel normal and luxurious.
➤ How to determine if a product is actually natural.
➤ The top  beauty and hygiene products lurking in our cupboards that we should replace with a natural version right away.
➤ Top chemicals to avoid.
➤ Women in business.
➤ Finding the right mentor.
➤ Overcoming business disasters.
➤ How to break through tunnel vision to see the impact that we are having on the people around us.
➤ Balancing out good and bad days as an entrepreneur
➤ Women supporting women.

How Plant-based Living is Changing the Bodybuilding Industry with Mark Chapman

How Plant-based Living is Changing the Bodybuilding Industry with Mark Chapman

In this episode of the Jennifer Zee Plant-based and Happy Podcast, I had the opportunity to chat with Pro Vegan Bodybuilder Mark Chapman.

Mark is a 51-year-old pro vegan bodybuilder. He has been vegan for 11 years and was vegetarian for 10 years prior. Mark is also a retired police Sergeant from Southern California and now lives in Central Oregon. He originally went vegan because of the inhumane conditions of animal agriculture. After seeing the enormous health benefits of a plant-based diet he decided that he could never go back. Mark is an athlete ambassador for Switch4Good and sponsored by Gains in Bulk.

One of the major questions that I have often wondered about is, if a bodybuilder eating a typical bodybuilders' diet consisting of animal protein, decides to go plant-based and wants to compete as a vegan bodybuilder, how long do you think they should wait before they can actually call themselves a vegan bodybuilder? Do they wait? And is there an element of false advertising? Mark tackles these questions and more while he shares his secrets to looking and feeling his best over 50.

In this episode Mark and I chat about:
➤How the plant-based lifestyle helps to reduce inflammation within the body.
➤Feeling your best over 50.
➤The truth about testosterone in the bodybuilding industry.
➤Problems with the typical bodybuilder’s diet and what happens when a bodybuilder goes plant-based?
➤How the average, out of shape, over 45 year-old guy can turn it around and get into the best shape of his life.
➤How being plant-based is giving bodybuilder’s an edge on the competition!

Making Over Meditation with Founder and CEO of Unplug Meditation Suze Yalof Schwartz

Making Over Meditation with Founder and CEO of Unplug Meditation Suze Yalof Schwartz

In this episode of the Jennifer Zee Plant-based and Happy Podcast, I had the amazing opportunity to connect with Suze Yalof Schwartz, the founder and CEO of Unplug Meditation in Los Angeles, California, the world's first drop-in secular meditation studio.

Not too long ago my husband and I discovered Unplug Meditation on recommendation from my father-in-law and it was the very first time we had ever experienced a drop-in style, group meditation session. We travel often and the 'drop-in fitness class' style is perfect for us, but I had never imagined that this could apply to meditation until we found the Unplug studio.  One thing led to another and I ended up with Suze’s book 'Unplug: A Simple Guide to Meditation for Busy Skeptics and Modern Soul Seekers' in my hands and couldn’t put it down.  I knew right then and there that I had to have Suze on the podcast and luckily, she graciously accepted my invitation!

Suze was a fashion editor and "makeover guru" working at Vogue, Elle, Marie Claire and Glamour Magazine with regular appearances on Good Morning America, The Today Show, CBS Early Show, and more. Once she discovered meditation, she was determined to keep doing it, but she could not find a place to easily learn and practice. After taking hundreds of hours of classes, reading every book possible, and listening to podcasts and lectures from the world's most famous meditation teachers, Suze realized that meditation needed a makeover and she was the one to do it. Suze's mission is to make meditation simple, accessible, powerful and interesting enough so that everyone will want to practice it and experience the benefits for themselves.

In this episode Suze and I chat about:
➤ Trading the glamorous world of fashion for meditation
➤ The unique way that Unplug is reaching busy stressed-out people
➤ Being ahead of the mindfulness trend
➤ How meditation changes the structure of your brain
➤ Why meditation is so addictive (in a good way)
➤ Demystifying the practice of Tapping
➤ What the near future has in store for Unplug
